Now that Thanksgiving is over and Christmas is right around the corner, our mail boxes will be stuffed full of national magazines advertising their most popular products.

From Pottery Barn to Toys R US, we’ll be inundated with the must-have products of 2011. While most people will give these magazines a quick scan then toss them into the recycle bin, I will be searching for the latest and greatest wine accessories.

It’s okay to make rookie mistakes in anything if you are first starting out. How can anyone hold you accountable if no one ever told you the right way to do something? Getting started in wine can be a fun journey, and you can even enhance your career if you know a little bit about the stuff. Here are some rookie mistakes which you should avoid, by doing so, you’ll quickly increase your wine credibility:

Don’t store wine in the refrigerator – Wine should be kept in a cool, dark place. If you keep your wine in the fridge, it will probably be kept at too cold of a temperature, plus light will infiltrate the bottle each time you open the refrigerator door. Sure it would be great to have a wine cellar dug out in your backyard, but we all can’t do that. My best advice is to purchase a wine cooler. They can be expensive if you are looking for a large wine cooler that holds a lot of wine, but you can get a wine cooler that doesn’t hold as many bottles and you can almost always find one on Craigslist for cheap.
Serving white wine too cold and red wine too warm - Red wine can be enjoyed at room temperature, but if you can, chill it in the fridge for a few minutes. White wine is meant to be served chilled, not cold. If your white wine is a little too cold, you can warm up the wine by letting it sit for a bit before opening it, or you can cup your hand around the glass to warm it up a little faster.
Keeping your wine in an ice bucket at a restaurant – While a lot of restaurants will serve you a bottle of white wine in an ice bucket, leaving your wine in there for too long will make the wine too cold, and you cannot enjoy the true aroma or taste of the wine.
Removing the foil just below the rim to reveal the cork – This might be nit-picking, but the tool used to remove the foil on the neck of the wine bottle does not cut the foil at the right place. A properly de-foiled bottle of wine (to reveal the cork) is about an inch below the lip of the bottle, not the sliver of foil cut right at the top of the bottle. To properly cut the foil, you will need a knife or blade.
Calling any sparkling wine “champagne” – The only wine that can be called “champagne” is the bubbly wine that comes from the Champagne region in France. No other wine can legally be advertised as “champagne” if it is not from that region. If you have something bubbly that is not from the Champagne region, call it a sparkling wine. There is nothing wrong with that.
Serving wine in the wrong glass – You can be as snooty as you want with your wine glass collection, but the minimum is two types of glasses. One for red and white wine, and the other is a champagne flute for sparkling wines. There are a lot of different shapes of glasses made specifically for different wine varietals, but don’t make a rookie mistake and serve a sparkling wine in a regular wine glass.
Forgetting about wine and letting it turn to vinegar – Wine can really only be kept in true form for about 3 days maximum. After that, the true taste of the wine might be compromised. There are some vacuum pumps out there which will remove some air from the bottle and create a better seal, but those will only buy you a little bit of time. If you are having trouble finishing a bottle of wine, invite a friend over.
Pouring too much wine in the glass – While I’m all in favor of a big filled wine glass, make sure there’s enough room so you can comfortably swirl the wine in the glass and not have it spill over the sides. Wine should be served in the glass half full, or less.
Not sniffing the wine before you drink it – The great joys of tasting wine is smelling the aroma the wine produces. Before you drink any glass of wine, give it a good swirl around the glass and your olfactory sense might be surprised at some of the interesting aromas you smell. What you smell before you drink the wine and what you taste may be completely different, which is why wine is so interesting.
Hold the wine glass without class – The only time you should hold the glass at any point other than the stem or the base is when you are trying to warm up the glass. Assuming your wine is served at the correct temperature, don’t hold the glass at any other location because you will put finger prints on the glass, or you will warm up the wine too much.

Recipe: Preheat oven to 450 degrees F (230 degrees C). Use a French Fry cutter or cut 5-6 medium potatoes into wedges. Mix together 1 tbsp (15 ml) extra virgin Olive Oil, 1/3 cup (83 ml) grated parmesan cheese and 1 tbsp (15 ml) Orange Crate Spicy Oven Fries Seasoning. Cover baking sheet with parchment paper and spread potatoes evenly. Bake for 30-40 minutes turning every 10 minutes. Bake until golden. Do not allow fries to overcook. Hint: For Crispy Fries, turn broiler on for five minutes.

Recipe: On a sheet of foil, place Salmon Filet and coat with mayonnaise. Sprinkle 1 Tbsp of OC Lemon Dill Dinner Seasoning on 1 ½ lbs of Salmon Filet until covered/coated. Place 4-6 lemon slices on top of salmon. Close sides of foil over salmon and bake for 20-25 minutes at 350 degrees F until done. If Salmon is thick extend baking time.

Recipe: In a pitcher, mix 2 tbsp (30 g) Orange Crate Peach Iced Tea mix with 3 oz (90 ml) of water. Stir in the juice of one lime and 2-3 cups (500 to 750 g) of sliced mixed fruit. (Oranges, strawberries, grapes, apples, and peaches work well). Add 1 bottle (750 ml) of red wine, Zinfandel, Syrah, or Merlot are fine choices or use one of your favorites! Another Great Recipe - Beer Can Chicken

BEER CAN CHICKEN

Beer canning is probably the best way to roast or BBQ chicken. It makes for a flavorful and moist chicken your guests will love!

Season the chicken with Orange Crate BBQ spices. Rub olive oil over chicken and then sprinkle liberally with OC Cajun Chicken, Honey Garlic or our NEW Ribs seasoning.

Place the wire frame in a roasting pan, insert an open beer can into the space provided in the frame and place the chicken, with the opening of the body cavity down, over the can on the frame in a vertical position. Dispose of any liquid left after the chicken is cooked.

Roast or BBQ your chicken using your favorite beer. Use aluminum cans only. Can should be half full only. You can also use a half full soft drink can as well.

BBQ for 2 hours at 350 or until skin is crisp and juices are clear and enjoy the great taste of Beer Can Chicken with friends!

Tapenade

Takes 5 - 10 minutes to prepare!

1 cup (250 g / 8 oz.) pitted ripe black olives, drained.

1 cup (250 g / 8 oz.) manzanilla green olives with pimento, drained.

1 heaping tbsp (20 ml) of Orange Crate Tapenade seasoning (#OC10920 - $3.55- approximately 4 uses from one package)

1 clove of garlic, finely chopped

1 tsp capers (optional)

1/3 cup red bell pepper chopped

30 ml (2 tbsp) extra virgin olive oil.

Combine olives, oil, garlic, capers and Tapenade seasoning in a blender or food processor. Pulse and mince into a coarse paste, use a spatula to ensure all ingredients are combined.

Refrigerate for one hour to let the flavours blend. Serve in Orange Crate Brie Baker or other serving dish. Garnish with fresh sprigs of Parsley. Serve on crackers, baguette or on tiny toasts.

Delicious when served as a condiment with chicken or fish.

Benaya Tiles - Genious ideas

This week we were approached by a company that installs custom bath and shower stalls, bathrooms and kitchens primarily using marble.

They have experimented with using a Benaya tile as an inset in the shower wall of an installation…..unique approach to highlight a custom install.

Below is a photo to show how they inset the tile and created a rope surround to frame the tile in the marble.

They intend to use the 6x16” size for insets, 4x4” and 8x8” for kitchen backsplashes, and Benaya mirrors to coordinate in the bathrooms.

Benaya tiles are significantly cheaper than custom kitchen or bath tiles that are hand painted in Europe or North America!

This is a great suggestions to make for customers to broaden their thinking of Benaya as simply an artistic tile that is hung and placed on a table.

For further information please contact us on how you would remove the backing to insert tiles.

Also another idea: We have several customers that have been using Benaya prints to decorate their outside covered courtyards.

We do not suggest Benaya for outdoor use if it is exposed directly to the elements.

However, Benaya can be displayed on a covered deck or protected entranceway but not outside where the weather can attack the tiles.

The Benaya tiles are very similar to coir mats….if they are exposed to direct sunlight, rain, freezing temperatures and snow they will not last long outdoors.
